Vinification & Aging
The grapes are hand-picked and placed in small crates. After the harvest, the grapes are taken immediately into the winery. Cooling the grapes at 8 °C, destemming and maceration for 9 hours at 10 °C. Static settling and fermentation at controlled temperature in small stainless-steel tanks.
Aged in steel for three months on the fine lees with frequent stir.
Ecosystems
Savatiano has been cultivated for more than 2500 years in Attica. The old non-irrigated bush vines (50-60 years) in the infertile, rich in minerals, limestone soils give very low yield of concentrated fruit. The average yield is 30hl\ha.
Tasting Notes
Bright lemon color with green highlights. Aromas of medium intensity, stone fruits, white flowers with characteristic herbal notes. Rich taste with mouth aromas continuing at the same intensity which, combined with its cool acidity, offer a taste balance and a long aftertaste.
